As the fish get to a new stage they become more valuable in cash and experience as well. So if you want the most experience and cash possible for each fish you need to let them fully mature before selling them.
Quick Experience Points
If you want to rack up a lot of experience points quickly it is best to look at the points earned for each hour. You can be easily deceived if all you see is a big amount of points from the sale of a particular type of fish. All too often the fish having a lump sum payout are not really the best if you are trying to get points quickly. A lot of times the big payout fish are the slower growing ones. If that is the case you might be better off raising a bunch of fish with a short cycle. You could gain a whole lot more experience points by raising several batches of short cycle fish in the the time it would take to raise one big point fish. While they may not pay as much, since it doesn't take as long to raise them you make it up on volume.
When you first start playing FishVille accumulating coins may seem a whole lot more important and exciting than the experience factor. Hey it takes money to buy things. But experience points allow you a bunch of different choices in the game, so you will definitely want to rack up as much experience for points as possible.
